White Wines

Our white wines are made according to the purest Roussillon' s tradition.

We ban all the technologies and we aim to find in our wines the climate of our terroir. The aromatic evolution of Macabeu, Grenache Gris and grenache Blanc is very close to the Rivesaltes and the rate of alcohol plays a conservative part and allows our white wines to be kept for a long time.

We look for a natural oxydation thanks to a maturation period of 10 to 20 months in 400 and 600 liters barrels (for Macabeu we use new barrels and for the Grenache we use barrels of 1 or 2 wines). The Vanilla arome does not unbalance this rich mineral wines.

The average yield is about 10 hecto by hectare. This well marked  tipicity is in total opposition with the majority of white wines made with technologic means, low temperatures or filtrations because these types of process create dead anonymous wines.
